Description
Sugar is a generic term for edible crystallized carbohydrates, mainly sucrose, lactose, and fructose. Specifically, small monosaccharides and oligosaccharides. Its main characteristic is its sweet taste.
1. Brown sugar
It is a raw, dark, moist sugar. It is extracted after the sugarcane juice is cooked and, as it does not go through the refinement process, it preserves mineral salts such as calcium, iron, magnesium and potassium. It tastes similar to sugarcane juice. Comparatively, it differs from table sugar mainly by its color, its characteristic flavor and the greater amount of nutrients it contains.
2. Demerara sugar
It is taken directly from the sugarcane molasses. It has moist and transparent crystals and a lighter color than brown sugar. It does not go through washes or purification processes and does not contain chemical additives. Like brown sugar, it has higher amounts of mineral salts than refined sugar.
3. Crystal sugar
It is whitish and is composed of large, transparent crystals. During its production, sugarcane juice undergoes purification, evaporation, crystallization, centrifugation and drying. Refined and confectioner's sugar are produced from it. Although it is a little less processed than the latter two, it has no advantages in terms of its mineral salt content.
4. Refined sugar
The production process of this compound begins with the dissolution of crystal sugar, which then goes through the stages of clarification and filtration. Refinement removes vitamins and minerals, leaving only sucrose.
5. Coconut sugar
Extracted from the fluid of coconut palm flowers, it is a substitute for cane sugar, and does not undergo refinement or adulteration. In addition, it does not contain preservatives. Coconut sugar has a high amount of potassium, magnesium, zinc and iron and is a natural source of vitamins B1, B2, B3 and B6. It has a low glycemic index, being digested more slowly.
6. Light sugar
Also known as fit sugar or low-fat sugar, light sugar is the mixture of common refined sugar with artificial sweeteners such as sucralose, sodium cyclamate, or sodium saccharin. It is less caloric than common sugar, due to its lower sucrose content, but it should be consumed with caution.
